We learned how to make fresh rice paper from scratch, Ban Xeo, fresh spring rolls, green papaya seafood salad, and a chicken claypot dish. Super delicious and surprisingly easy! We opted to stay one extra night in Hoi An so that we could see the Lantern Festival for the full moon. It was tough to take pictures in the low light, but we took a really pleasant (if tourist-y) boat ride on the river and released paper lanterns with candles in them with our intentions for the new year.
